Pulled Lamb Shoulder, Easy recipe! Inkl Rub and Mint Dressing

Easy pulled lamb shoulder on the menu today. An easy "set it and forget it" recipe. Don't forget to check out 737viking.com and instagram.com/737viking where you can follow my stories as I prepare the dishes. For the shoulder, the recipe is as follows:

1. Remove the hard fat.
2. Add a binder like hot sauce, oil etc. I used yellow mustard.
3. Rub it up! I used 2ts salt, 2ts herb mix (used Wildfire) 1 ts pepper, 1ts garlic powder and 1 ts mustard powder.
4. Smoke it for 4 hours at 125C/260F
5. Wrap it thightly in foil and add some liquid. I used chicken stock. Feel free to use beer, apple juice etc.
6. Remove when its 95C/203F internal.
7. Place it in a cooler and let it rest 30-60min.
8. While it rests, make the dressing. Mix chopped fresh mint, greek yoghurt, garlic, lemon juice and honey. I eye ball this. But approximately 3dl yoghurt, fist of mint leaves, 1 small clove of garlic, juice of half a lemon and a tbs of honey.
9. Pull the shoulder by hand, two forks or bear claws.
10. Remove some of the filling in a soft bun, and add the meat and dressing.
11. Enjoy!
