• THE DANIEL FAST 2019- Day 8- Grilled Philly Cheesesteak- Creamy Potato Soup•

Hello friends! I’m on day 8 of the Daniel fast and feeling great! I wanted to share 4 new recipes with you today. First I make a sweet creamy fruit salad. It can be eaten as a breakfast, or added to oatmeal, or a smoothie. You can eat it as a desert, or even just a snack. It’s so yummy you won’t know it has zero sugar. Next I make vegan chicken patti sandwiches for lunch. I used sandwich thins with vegan mayo, Dijon mustard and lettuce. We also ate those addictive veggie tots with it. ( I’m obsessed!) there so good you won’t even want to dip them in anything. Next I make grilled Philly cheesesteak. YUM! I tried it on quesadilla’s and in a burrito form. Both are amazing. I also made a avacodo guacamole to dip them in. ( love!) Last but not least I share my thick and creamy vegan potato soup recipe. It’s so full of flavor you won’t know it’s missing anything. ( potato soup is my fav 😋)

Sweet Cream Fruit Salad~

2 cups chopped fresh pineapple
1 chopped Granny Smith apple
1 medium sliced banana
5 large sliced strawberries
1 cup chopped walnuts
1/3 cup unsweetened flaked coconut

Mix chopped fruits in bowl, and set aside. add to blender

1 can light coconut milk
1 tsp vanilla (or extract flavor of you choice)
tbs almond flour
1/4 cup unsweetened coconut flakes
blend until smooth, then pour over fruit bowl.

Vegan Grilled Philly cheesesteak ~

1/2 white onion
1/2 orange bell pepper
3 green onions
1/2 cup mushrooms

Add tsp coconut oil to fry pan. Add peppers, and onions, and cook until tender.
add
1 package vegan steak strips, and mushrooms.
1 tsp Grill Mates smokey Montreal steak season
2 tsp Worcestershire sauce
1/2 tsp pepper
Cook on low for at least 7 minutes, then add 1 tbs minced garlic. Turn off heat. Fill wheat tortillas with mixture, and top with vegan mozzarella cheese. Grill as quesadilla, or burrito style.

Creamy Potato Soup~

7 medium russet potato, peeled, and chopped.
6 cups water
Cook potato until soft.
remove half the potatoes and place in blender. Let it sit for 10 minutes, and cool.
meanwhile chop
3 celery stalks
1/2 white onion
add celery tops to portals in pot along with
2 bay leaves
1 tsp veggie bouillon.
add
1/2 cup cold water to blender with potato,
1 cup almond milk
3 tbs almond flour
1 tbs pepper
1 tbs johnnies season salt
1 tsp smoked paprika
1 tsp sea salt
blend in blender until smooth.

Remove celery tops, and bay leaves from pot. add chopped onions, and celery, and contents of the blender.
Cook for half an hour or until thickened. add more salt, and pepper to taste. ENJOY!
