CRISPY PATA

Ingredients:
Marinate:
1 big Pork leg
1 tbsp rock salt
1tbsp ground black pepper

Poaching Liquid:
5 tbsp. rock salt
1/2 tbsp of black pepper corns
2 dried bay leaves
water

Rub before frying:
liquid seasoning / sprinkle of salt

Dipping sauce:
1 small onion sliced
Half of whole garlic minced
2 chili fingers sliced
2 thai chili sliced
½ c vinegar
½ c soysauce
5 kalamansi juice
1 tbsp sugar
1tsp salt
½ tsp pepper
