Sabudana Kheer is a delicious and creamy Indian dessert made with tapioca pearls (sabudana), milk, and sugar, often flavored with cardamom and garnished with nuts. It's especially popular during fasting periods like Navratri. Here's a simple recipe:
🌿 Ingredients:
Sabudana (tapioca pearls): ½ cup

Full-fat milk: 1 liter

Sugar: ⅓ to ½ cup (adjust to taste)

Cardamom powder: ½ tsp

Cashews: 8–10 (optional)

Raisins: 10–12 (optional)

Ghee: 1 tsp (for roasting nuts)

Saffron strands: a few (optional)

🔪 Instructions:
Soak Sabudana:
Wash the sabudana 2-3 times and soak in enough water to cover them for 4-6 hours or overnight. They should be soft and fluffy after soaking.

Cook Sabudana:
Drain and transfer to a saucepan with 1-2 cups of water. Boil for about 10 minutes until the pearls turn translucent and soft. Stir occasionally to prevent sticking.

Boil Milk:
In a separate heavy-bottom pan, bring the milk to a boil. Lower the heat and simmer, stirring frequently, until it thickens slightly.

Combine:
Add the cooked sabudana to the milk. Stir well and let it simmer for 10–15 minutes until the kheer thickens.

Sweeten & Flavor:
Add sugar and cardamom powder. Stir till the sugar dissolves. Optionally, add saffron soaked in warm milk for extra flavor and color.

Garnish:
Heat ghee in a small pan. Fry cashews and raisins until golden. Add to the kheer.

Serve:
Serve warm or chilled, as preferred. It thickens more as it cools!
