5 lbs lean beef cut in cubes
3 tbsp ginger and garlic
1 tsp salt
1/2 tsp black pepper
Method:
In your instant pot, add the meat, the ginger and garlic, and black pepper, saute the meat until its not red, hit the meat stew button and make sure you seal the instant pot and let it cook for 30 minutes, after the 30 minutes, let it slow release for about 15 min, once you open the ip let it saute on high to make sure all mixture is completely dry. At this point you want to make sure that the meat is soft and shredding by just mixing it. Keep aside and if you like you can temper it, this process makes this meat stuffing delicious.
Ing to temper the mixture:
2 tbsp olive oil
1.5 tbsp fresh ginger and garlic
4 to 5 curry leaves
2 red dried chilli peppers (optional)
3 heaping tbsp tomato paste
2 tbsp sambal (if you can find it) Optional
1/2 tsp salt
1 tsp black pepper
1 tsp lemon pepper
1 tsp cajun seasoning
Method:
In a big sauce pan add the olive oil, once it's warm add the ginger and garlic and let it saute so it releases all the oils and flavors, next add curry leaves, chili peppers, and the tomato paste, let the tomato paste cook until it becomes a little dark, then add the sambal, if you can find it, if not leave it out, add the salt, pepper, lemon pepper and the cajun seasoning, lastly add the meat mixture and cook it for about two minutes. Make sure to cool the mixture before you put it in freezer bags.
This mixture can be used for just about anything.
