Ingredients:

500 grams bhindi (okra/ladyfinger), washed and chopped

2 medium onions, thinly sliced

2 medium tomatoes, chopped

2 green chilies, chopped (optional)

1 tsp cumin seeds

1/2 tsp turmeric powder

1 tsp coriander powder

1/2 tsp red chili powder

1/2 tsp garam masala

Salt to taste

2–3 tbsp oil

Fresh coriander leaves (for garnish)

Instructions:

Wash and Dry Bhindi
Wash the bhindi and dry it completely using a cloth or paper towel. Chop into 1-inch pieces.

Cook Bhindi Separately
In a pan, heat 1 tbsp oil and sauté the bhindi on medium heat until it's soft and slightly crisp. Remove and set aside.

Prepare the Masala
In the same pan, add 2 tbsp oil. Add cumin seeds and let them splutter.
Add sliced onions and cook until golden brown.
Add tomatoes and cook until soft.

Add Spices
Add turmeric, coriander powder, red chili powder, and salt. Cook until oil starts to separate from the masala.

Combine Bhindi with Masala
Add the sautéed bhindi to the masala
