Romaine Wedge Salad with Nutrient Packed Herby Dip #veganrecipes #veganandglutenfree #saladrecipe

This crunchy and super satisfying wedge salad is not only a nutritional powerhouse choc full of calcium, fiber and other nutrients, but it’s also the most fun way to eat a salad. I hope you love it!

Ingredients:

For the salad and toppings:

2-4 heads of baby romaine, cut into quarters, lengthwise
1/4 cup chopped toasted pistachios or toasted slivered almonds
Optional: A few thin slices of red onion

For the herby dip or dressing:

2/3 cup water (add slowly only as needed)
1/2 a lemon, juiced
1 tablespoon apple cider vinegar
2/3 cup raw cashews
2 garlic cloves, peeled
3/4 teaspoon salt
1/3 cup nutritional yeast
2 cups kale, stems removed
1/3 cup fresh dill, chopped (reserve some for topping)
1/3 cup fresh chives, chopped (reserve some for topping)
1/3 cup fresh cilantro, chopped (reserve some for topping)
