ROASTED CAULIFLOWER SOUP REALNESS (LOW FAT!)
On this episode of "Angela's Anything Show," Angela shows you how to make her original recipe for spicy roasted cauliflower soup. This soup is vegan, low-fat, and overall healthy AF, but it's so creamy and delicious that you'd never know. Full recipe below!
**SPICY ROASTED CAULIFLOWER SOUP**
(ingredients)
1 medium sized head of cauliflower
4-6 green onions OR leeks OR scallions
3-4 garlic cloves
1 TBS salt, pepper & paprika (you'll have to add more salt post-blend)
1/4 TBS cayenne (start there and add more if you want)
1/4th cup nutritional yeast
1/2 cup non-dairy milk
1/2 TBS olive oil (to toss with cauli while roasting)
2 cups water
3 TBS hulled hemp hearts
(directions)
1. preheat to 350 degrees & break cauliflower into medium/large florets (size doesnt matter cause you're gonna blend them)
2. toss cauliflower florets with salt, pepper, paprika & cayenne in a little olive oil
3. lay out on tray and put in oven for 25 minutes
4. take out and add roughly chopped garlic cloves and green onion
5. roast for 15 more minutes
6. when finished roasting, add to pot with two cups water & 1/2 cup unsweetened non-dairy milk
7. turn the heat to medium and let it all intermingle for ~15 minutes
8. pour into blender and add hemp hearts
9. blend until smooth
10. add back to pot and add nutritional yeast + salt or more seasonings to taste
stir and serve!
