I tested my Thomasville citrus over several months to find the best harvest window—and the flavor changes are surprising.

In late fall, it tasted like a lime.
By December, more like a lemon-lime.
In February, it was fully orange and tasted like an orange.

Now in March, I did a final taste test—and while it still tastes good, the fruit is noticeably drier and the membranes are much thicker.

So here’s the takeaway:
Harvest between November and January (or early February) for the best flavor and texture.
