Instructions:

Prepare the dough:

In a large bowl, combine whole wheat flour, chopped methi leaves, green chilies, ginger, ajwain, cumin seeds, turmeric, and salt.
Mix everything well. You will notice that the methi leaves release some moisture, so you might need less water to knead the dough.
Gradually add water, little by little, and knead the mixture into a soft, smooth dough (similar to chapati dough).
Once done, cover the dough and let it rest for about 15-20 minutes.
Roll out the paratha:

After resting, divide the dough into small lemon-sized balls.
Dust a flat surface with some flour and roll each dough ball into a round, flat circle (around 6-8 inches in diameter). You can roll it slightly thicker than chapatis if you prefer a more robust texture.
Cook the paratha:

Heat a tawa or griddle over medium heat.
Place the rolled-out paratha onto the hot tawa. Let it cook for about 1 minute or until small bubbles appear on the surface.
Flip it over, and cook for another minute.
Apply a little ghee or oil on both sides and cook until golden brown and crisp on both sides. Press gently with a spatula to ensure even cooking.
Serve:

Serve the methi paratha hot with yogurt, pickle, or curry of your choice.
