Huevos a la Mexicana Recipe

For the eggs
Roma tomatoes, medium 2 ea or 8 oz
White onion, medium 1/2 ea
Serranos 2 ea
Eggs, whole and large 6 ea
Salt To taste
Oil, Olive 2 TBSP

For the salsa
Roma tomatoes 1 lbs
Serranos 2 ea
Garlic, cloves 1 ea
Salt to taste
Toppings: Diced onion and chopped cilantro.

For the refried beans
White onion, medium 1/2 ea
Garlic, cloves (large) 1 ea
Oil, olive 2 TBSP
Pinto beans, canned 3 cups
