To make the salad: I grilled a nectarine (or you can use peaches) in a grill pan sprayed with avocado oil.

I grilled for 2 minutes on each side and topped a plate of arugula with the warm nectarines, dried apricots, sunflower seeds and a drizzle of olive oil. Then I added a dollop of whipped vegan feta, a drizzle of balsamic glaze, and salt and pepper to taste.

Balsamic Glaze: In a saucepan, bring 1/2 cup of balsamic vinegar to a light boil then immediately reduce heat to a simmer and simmer for 20-30 minutes with a lid ajar. Check occasionally. When reduced by half and thick and glossy, it’s ready to serve.
