ELEVATED BAKED PORRIDGE RECIPE
1 tbsp vegan butter (or coconut oil)
60g oats (less or more depending on your needs)
1 tsp brown sugar 
1/4 tsp cinnamon
1 tsp vanilla
125ml plant milk
1/2 ripe banana (chopped)
1 tbsp nut/seed butter
a pinch of salt

METHOD
1. Pre-heat your oven to 180 degrees celsius 
2. Melt the butter in a saucepan on a medium heat and then add the oats. Stir for 1 minute to ensure they are well coated in the butter. 
3. Next add the sugar, cacao powder, cinnamon and vanilla and give them a quick stir, then add the milk and banana and stir for 1 more minute. Reduce the heat
4. Let the oats cook gently for 2 more minutes, stirring in the nut butter, nuts and salt
5. Pour the not-quite-done porridge into a baking dish. Add an few slices of banana, an extra sprinkle of brown sugar and another pinch of salt
6. Place in the oven for roughly 20-25 minutes until golden brown and slightly crispy around the edges
7. Remove from the oven and allow to cool
Serving suggestions: cold plant milk, plant based yoghurt or fresh fruit. But it's great just straight from the baking dish!
