This year for Thanksgiving I take a break from killing animals and explore what exactly it takes to make a completely vegan meat-substitute from scratch. The tofu-turkey, aka Tofurkey, I make uses a combination of tofu, seitan and nutritional yeast, plus a cornbread stuffing. I also tryout living by a vegan diet while working on this project, just for the full experience.
