Chilli Courgette Ribbon Salad

Our Chilli Courgette Ribbon Salad couldn't be simpler! Courgette ribbons are combined with a tasty dressing made of Mellow Yellow Chilli Oil, lemon juice, mint and garlic to create a light, refreshing summer salad. Marinading the courgette in the dressing for half an hour or so really helps to develop the flavours and textures of this salad. 

This recipe uses Mellow Yellow Chilli Oil, with just the right amount of chilli flakes infused into our cold pressed rapeseed oil, this chilli oil is just the thing to pep up pizzas and pasta, spice up a salad or salsa or give gusto to meat and fish.
