PANJ TORTA

Panj torta je jedna od onih klasičnih i finih čokoladnih torti.
Fine korice sa orasima bez brašna, fil koji se kuha na pari sa dodatkom čokolade čine ovu tortu starinskom, klasičnom a ovaj izgled ju malo čini nesvakidašnjom.
Ova torta je veoma čvrsta i sabilna ali kada je zagrizete ona se topi, to je ono što ovaj fini fil kuhan na pari uz dodatak maslaca i čokolade radi.

Ingredients for the sponge cake:

6 eggs
100 g of sugar
150 g grounded walnuts

Ingredients for the filling:

6 eggs
150 g of sugar
200 g of dark chocolate
200 g butter
aroma of rum or rum

150 g of walnuts
Preparation of the sponge cake

Prepare 6 eggs and separate the egg whites from the yolks.
Whisk the egg whites until half done and start adding sugar spoon by spoon.
Continue whisking until firm.
When you get a fine and firm mass, add the egg yolks and mix briefly.
Add 150 g of grounded walnuts and stir briefly.

Prepare a baking tray with baking paper and transfer the sponge mixture over the paper and bake it at 180 degrees C for 15 to 18 minutes, depending on the strength of the oven.

When the sponge is baked, place it on a kitchen cloth and roll it up and let it cool.

Preparation of the filling

Whisk the egg whites and add the egg yolks and sugar. Just mix this up briefly. Steam this mass for about 15 minutes, depending on the strength of the boiling water.

The water should boil a little, but it should not boil so that the steam raises your pot.
When the water boils I lower the hob to 6 out of 9.
Make sure that the temperature of the mass does not exceed 75 degrees C. When the temperature reaches 72 degrees C, cook it for another two minutes and remove the bowl from the steam.

While this mass is still hot, add chopped chocolate and stir until you get a completely uniform mass.
Allow the filling to cool.
Transfer the softened butter to room temperature in a bowl and mix with a mixer until smooth. Start adding spoon by spoon of cooked mass with chocolate and stir until you get a completely uniform mass.
Add the aroma of rum if you wish.

Preparation of caramelized nuts

Melt the sugar in the pan until it begins to caramelize.
Add the chopped walnuts, stir and toss them over the baking paper and leave to cool.
When cooled, grind them with a knife or in a blender.
It is important not to let the sugar get burned.

Cake filling

Divide the filling into two parts.
Add caramelized nuts in one portion.
Unroll the crust and coat it with the filling to which you have added the caramelized nuts.

Wrap this in a roll and cut it in half or thirds.

Lean one piece along the roll to make it look like a branch.
Coat the roll with the rest of the filling and make the decoration as desired.
