Wagyu Brisket Trimming Smoked Beef Stew On The Akorn #wagyu #brisket #bbq

Hey Everyone, today we’re going to talk about my favorite new dish to make. That is smoked beef stew made from my wagyu competition brisket trimmings on the Char-Griller Akorn. This recipe is fast, easy, and so delicious. It really feels like cheating when you’ve got something this good in your back pocket knowing you’ve always got some sort of beef trimmings in the freezer. I think one of the biggest reasons I love this recipe, other than taste hahahaha, is it’s probably the best use of meat trimmings I have found, you can add as much or as little as you want and it still works so it’s very flexible. Ingredients:

Roughly 2 pounds of cubed up beef
2 cups of quartered red potatoes
1 medium onion diced
1 cup of chopped celery
2 cups of baby carrots
1 package of McCormick’s beef stew seasoning
Recipe:

Heat the Akorn up to 375 degrees with the cooking stone in place.
Place a 5 quart cast iron dutch oven on the grate and allow 5 minutes to heat up.
Put the beef into the dutch oven for 10 minutes to brown, stirring occasionally.
Add the beef stew seasoning to 24 ounces of water.
Add all vegetables and the beef stew seasoning mixture to the dutch oven with the beef and stir.
Stir the dutch oven every half hour for the next two hours.
Remove the dutch oven from heat, let cool, and serve.
