When we cut an onion, this acid is released along with some special enzymes. When these enzymes react with amino acid sulfoxides they form another chemical called Syn-propanethial-S-oxide. But why do onions have these acids and are they bad for us? How does the acid reach our eyes? Why does it make our eyes burn? Why do we end up in tears?
