Fried Chicken Sandwich with Homemade Sweet Potato Buns | At Home With Us
Today we’re visiting the Seattle kitchen of Romel Bruno (@nappyfriiedchicken on Instagram) to see how he makes a fried chicken sandwich with homemade sweet potato buns—a recipe that means a lot to him. Growing in New York City, his family would often frequent many of the fried chicken institutions the city had to offer, and this is his homage to that time. “Fried Chicken has been very beneficial to us as a culture. It made a lot of us first-time entrepreneurs, and gave us a safe haven to eat when we couldn’t patronize certain places.”
INGREDIENTS
Fried Chicken
~ 5 boneless, skinless chicken thighs
16 ounces (2 cups) buttermilk
3 tablespoons hot sauce
2 tablespoons salt
1 tablespoon celery seed
1 teaspoon garlic and onion powder
Black pepper to taste
Flour to dredge (about 3 cups)
Neutral oil to fry
Sweet Potato Buns
1/2 pound of sweet potato peeled and cubed
1/2 cup of all purpose flour
1/4 ounce dry active yeast
1/2 cup of warm water
1 large egg
3 tablespoons of melted butter
2 teaspoons of honey
1 1/4 of kosher salt
3 1/4 cup of flour more if needed
1 tablespoon of sesame seeds
Aioli
2 large egg yolks
1/2 bunch of fresh tarragon chopped
1/2 a cup of champagne vinegar
1 1/2 cup of neutral oil
2 tablespoons of honey
2 tablespoons of dijon mustard
Salt and pepper to taste
