Chocolate Cherry Sourdough Bread with custom stencil

Here's my process for making chocolate cherry sourdough bread. The recipe is for two loaves. I gave my starter a boost by feeding it twice (9am and 9pm) before I mixed the dough at 10am the next morning.

Ingredients for two loaves
• 200 g mature levain (this is fed, active starter)
• 700 g + 50 g filtered water at room temp
• 900 g bread flour (I used ABC from Central Milling)
• 100 g whole-wheat flour (I used hi-pro fine, Central Milling)
• 20 g salt
• 240 g bittersweet chocolate chips(Callebaut dark chips)
• 300 g dried cherries, rehydrated in warm water
