This is one of the creatures from Jimbo's side quest, Big Game Huntin'. This mini-boss is considered one of the easiest in the game, regardless of the difficulty level you're playing on. His attacks are very limited and predictable, making him easy to defeat at this stage.

The only real challenge is his large health pool—over 6,000 HP—which means the fight can take some time. To speed things up, try adding status effects to your weapons to bring him down faster.
