How to Smoke Beef Cheeks

Now i'm going to show you step by step how to smoke beef cheeks. Beef cheeks are so rich, tender and juicy, one of our favourite cuts for pulled beef. They need a bit of trimming and a bit of extra work as opposed to something like beef chuck or beef shin. But i'll show you everything you need to know in this video so you can nail some beef cheeks at home!
We turn some into beef cheek tacos with a mango salsa using the below ingredients for the salsa!
- Finely diced mango, about 3-4 tablespoons
- Finely chopped mint, about 1 teaspoon
- 1/4 of a finely diced red onion
- 1/4 of a red chilli finely sliced
- 1/2 a lime
It's so simple! Just combine all the above ingredients and squeeze your 1/2 a lime juice in, stir around and it's ready!
Then we do some sliced beef cheeks and put them in some Bao. You can make the Bao from scratch but I've just bought mine from a supermarket.
In the Bao I have the below....
- Thinly sliced pickled carrot
- Pickled red onion
- Thinly sliced cucumber
- Thinly sliced red chilli
I keep my pickling liquid super simple, the carrot and red onion I just put in a mix of 1 cup white vinegar with 2 tablespoons of sugar overnight.
I don't use a sauce as the beef cheeks have so much flavour and richness. But you certainly could use a sauce if you want! Completely up to you!
