Carrot wheat noodles are made by kneading wheat flour, salt, and water (sometimes with grated carrot) into a firm dough, which is then passed through an extruder (sevai/chakli maker) into boiling water. The extruded noodles are boiled for 5-10 minutes, rinsed in cold water, and stir-fried with carrots, vegetables, and sauces.

Detailed Making Process:
Prepare the Dough: Combine 2 cups of wheat flour,
tsp salt, and 1 tbsp oil in a bowl. Gradually add water and knead to a stiff, smooth dough, similar to chapati or slightly firmer.
Extrude the Noodles: Use a murukku or chakli maker (extruder) fitted with a fine-holed disc. Grease the maker with oil to prevent sticking.
Boil the Noodles: Bring a large pot of water to a rolling boil, adding 1 tsp oil and 1 tsp salt. Extrude the dough directly into the boiling water.
Cook and Rinse: Cook for 5-7 minutes until the noodles are tender but not mushy (or until they turn glossy). Drain the water and immediately rinse with cold water to prevent sticking.
Prepare Stir-fry: In a wok, heat 2 tbsp oil, then sauté garlic, ginger, and green chilies. Add sliced vegetables, including julienned carrots, onions, and capsicum, stir-frying on high heat until crunchy.
Combine and Serve: Add 2 tsp soy sauce, 1 tsp chili sauce, 1 tsp vinegar, and 1 tsp tomato sauce (optional) to the veggies. Add the boiled noodles and toss well to coat.
