Pollo a la Brasa or Peruvian Roast Chicken is beloved amongst Peruvians. The skin is marinated in a blend of spices then it’s cooked over coal or wood, giving the chicken an incredible crispy skin and tender interior with so much flavour! On this episode of Eating with Andy I’m taking you to a childhood favourite, La Granja Azul restaurant. It’s iconic and serves the most delicious Peruvian Roast Chicken in my opinion. They specialise in Roast Chicken but I also love getting the anticuchos and picarones.
