As people’s habits and lifestyles have changed the demand for processed potatoes has grown. As people’s habits and lifestyles have changed the demand for processed potatoes has grown. Potato chip consumption among children has declined, for example, while the market for mashed potatoes has grown significantly. Potato chips have also become a cheaper, healthier, and more convenient snack food than fresh potatoes. The popularity of chips has contributed to the low demand for fresh potatoes. One third of fresh potatoes produced in the U.S. are exported.
According to CoBank’s February 2017 Crop Report, one in every six acres of potato is turned into chips, french fries, hash browns and sweet potato fries. More than 30 percent of chips are baked, while 25 percent of chips are deep fried. French fries are by far the most popular category, with 29 percent of sales. Meanwhile, sales for cut fries have declined, but more than half of those sales are processed into French fries. As more consumers see the health benefits of eating potatoes instead of fried foods, the industry is projected to rebound over the next five years.
One of the primary reasons for the decline in french fry consumption is the rise of more health conscious consumers. Potato chip manufacturers have successfully marketed the healthier french fry products. For example, shredded potatoes provide a much lower calorie count than french fries. Also, unlike french fries, most sliced potatoes are cooked at high temperatures to protect against any harmful bacteria. This allows sliced potatoes to be quickly sautéed, fried or baked for crisper cooking, without breaking down the fibrous, gluten-containing exterior.
