Matcha Lava Muffins (vegan) ☆ 抹茶ラヴァマフィンの作り方

Ingredients:

For the matcha lava :
200g any vegan milk (I used soy milk)
1 tbsp matcha
1 tbsp tapioca powder
40g cane sugar

For the muffin :
400g whole pastry flour
80g oil
150g cane sugar
350g coconut milk
2 tbsp baking powder
a pinch of salt

30g almonds

Instruction :

1. combine all the ingredients for the matcha lava in a sauce pan, heat it up on low heat until it thickens.
2. pour the mixture in an ice tray and leave it it a freezer.
3. combine all the ingredients for the muffin and mix.
4. put the mixture a little bit in a muffin tin, then put matcha lava cube. add more muffin mixture to cover.
5. make at 350F/180C for 35 mins.

「材料」

抹茶ラヴァ
豆乳　200g
抹茶　大さじ1
タピオカ澱粉　大さじ1
きび砂糖　40g

マフィン生地
全粒薄力粉　400g
ココナッツミルク　350g
きび砂糖　150g
オイル　80g
ベーキングパウダー　大さじ2
塩少々

アーモンド　30g

「作り方」

１、抹茶ラヴァの材料を全て鍋に入れ、とろみがつくまで火にかけます。
２、アイスキューブに流し入れ、冷凍庫で凍らせます。
３、マフィン生地の全ての材料を混ぜ合わせます。
４、マフィン型などに少し流し入れ、抹茶ラヴァのキューブを入れ、マフィン生地で抹茶ラヴァが隠れるようにさらに加えます。
５、１８０℃で３５分ほど焼きます。
