Autumn Fisherman’s Soup (20 mins)
[Ingredients]
1 lb white fish fillets (cod, tilapia, or haddock), cut into chunks

1 small onion, diced

2 cloves garlic, minced

1 cup diced carrots

1 cup diced potatoes

1 red bell pepper, diced

4 cups vegetable or fish stock

1 tsp smoked paprika

½ tsp thyme

Salt & pepper to taste

1 tbsp olive oil

Optional: parsley for garnish

[Instructions]
1. Sauté aromatics
Heat olive oil in a large pot. Add onion + garlic, cook 2–3 mins until fragrant.
2. Build the soup base
Add carrots, potatoes, red bell pepper, paprika, and thyme. Stir 2 mins.
Pour in stock, bring to a boil, then simmer 8–10 mins until veggies are tender.
3. Add fish
Gently fold in fish chunks. Simmer 3–4 mins until fish is cooked through.
4. Season & serve
Taste and adjust salt & pepper. Garnish with parsley. Serve hot with crusty bread if desired.
