EASIEST PORK KARE KARE | YUMMY LIEMPO KARE-KARE | HUNGRY MOM COOKING
► INGREDIENTS:
1 kg Pork liempo/belly
4 cloves garlic, chopped
1 onion, sliced
3/4 cup peanut butter
4-6 cups water
3 tbsp cooking oil
2 tbsp annato seeds, soaked in 1/2 cup warm water
1 bunch bochoy/pechay
10 pcs snake beans, cut into 2 in strips
2 medium eggplant
slurry (1 tbsp cornstarch dissolved in 1/4 cup water)
salt and pepper to taste
► PROCEDURE:
1. Boil water enough to submerge the pork.
2. Place the pork and boil for 15-20 mins until the scums float.
3. Remove the pork and throw away the boiled water.
4. Soak the annatto seeds in 1/2 cup warm water.
5. In a clean pan, heat oil and sautee garluc and onion.
6. Place the boiled pork and sautee for about a minute.
7. Add about 6 cups water. This will evaporate while simmering.
8. Cover and allow water to boil then reduce heat to medium.
9. Simmer for about 30 mins till the pork is tender.
10. Add the peanut butter and annato water. Mix well.
11. Cover and simmer for about 15 mins.
12. Add the eggplant and snake beans.
13. Simmer for 5 mins.
14. Finally add the bokchoy and season with salt and pepper.
15. Serve with shrimp paste.
