The Most Delicious Mango Cake with No Fail Vanilla Sponge

Ingredients

Cake:

• 1.5 cups flour
• 1/2 cup sugar
• 6 eggs (separated into yolks and whites)
• 1 tsp baking powder
• 1 tsp baking soda
• 2 tbsp lemon juice
• 1/3 cup oil
• 1 tsp vanilla extract
• 2/3 cup milk

Topping:

• Whipped cream
• Mango puree (from fresh mangoes and 1 tbsp butter)
• Sliced mangoes

Recipe

1. Preheat your oven to 175°C (347°F) and prepare two cake pans by greasing and lining them with parchment paper.
2. Beat 6 egg whites, gradually adding 1/2 cup sugar until stiff peaks form. Test by inverting the bowl; if the mixture stays, it’s ready.
3. Sift together 1.5 cups flour, 1 tsp baking powder, and 1 tsp baking soda.
4. In another bowl, whisk 6 egg yolks with 1/3 cup oil. Gradually add the sifted dry ingredients. Then mix in 2/3 cup milk, 1 tsp vanilla extract, and 2 tbsp lemon juice.
5. Gently fold a spoonful of the egg white mixture into the egg yolk mixture. Gradually fold in the remaining egg whites, keeping the airiness intact.
6. Divide the batter evenly between the prepared pans and bake for 21-22 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely.
7. Meanwhile, blend fresh mangoes into a puree and cook with 1 tbsp butter until smooth. Let it cool before using.
8. Once the cake layers are cool, spread whipped cream on one layer, followed by a layer of mango puree. Place the second layer on top, then frost the entire cake with whipped cream.
9. Decorate with sliced mangoes on top, chill, and enjoy!
