Update 3/30/15: I do use Honey Granules now as a replacement for white sugar. Sucanat is a replacement for brown sugar. I purchase both from Bread Beckers, Honeyville, or our local Amish store.

To sub honey for a granular sugar, use 1/2 the amount of honey and play around with your liquid amounts to get the consistency correct.
