Golden Galushka with Vanilla Custard (Aranygaluska Vanília Sodóval)
This is a traditional Hungarian dessert, where small balls of dough are dipped in a melted butter then rolled in walnut-sugar mixture. They are then baked in the oven until Golden (Arany). It might seem difficult, but the key point is to have a well-risen dough - and the rest is just fun :) Best if served with home-made custard, but you can of course use a ready-to-eat custard, or make your own version.
Ingredients (for 6):
1lb (45 dkg) flour
1 packet active dry yeast
2,5 oz (7 dkg) butter
1 1/4 cup (3dl) milk
1 tbsp sugar
2 egg yolks
7 oz (20 dkg) walnuts or pecans
3,5 oz (10 dkg) sugar
3,5 oz (10 dkg) butter +1 tbsp for the pan
1. Dissolve 1 tbsp sugar in the lukewarm milk
2. Stir in the dried yeast and let it rise (5-7 mins)
3. Mix the flour with a pinch of salt, the milk-yeast mixture, the melted 2,5 oz (7dkg) butter and the egg yolks.
4. Mix everything together and knead well at least 10 minutes, until you have a soft, smooth dough
5. Cover the bowl with a kitchen cloth and let the dough rise in a warm place, until it doubles.
6. Meanwhile grind your nuts finely (but not too powdery)
7. Mix the ground nuts with 3,5 oz (10dkg) sugar
8. Butter a 10" (25cm) springform pan well
9. When your dough has risen, knead a little bit again
10. Tear off a small amount of the dough, form a ball with your hands
11. Dip the balls in the melted (3,5 oz, 10dkg) butter, coat them with the sugar-nut mix, then place it into the baking pan one by one
12. Do the same with the rest of your dough. Sprinkle the remaining nuts over the dumplings, and pour over the rest of the melted butter.
13. Let it rise again in a warm place about 20 minutes
14. Preheat your oven to 390F (200C) then put the pan into it and bake for about 45 minutes (check after 30 minutes - if it starts to brown to quickly, cover it with an aluminium foil)
15. While it's baking in the oven, make your custard
Home-made custard recipe:
1 cup (250ml) whole milk
1/2 (UK) pint (280ml) double cream
5 tbsp sugar
1 tsp vanilla extract or 1 vanilla pod /seeds removed/
4 large egg yolks
1. In a saucepan gently heat together the milk, double cream and 3 tbsp sugar.
2. Add the vanilla extract/or seeds and pods (if you have some) and cook on a low heat until it starts to boil
3. Meanwhile whisk 4 egg yolks with 2 tbsp sugar
4. When the milk reaches boiling point, remove from the heat and let it cool for a couple of minutes (discard the vanilla pods)
5. Then ladle a little of it into the egg yolks and whisk immediately
6. Pour this mixture back into the milk, stirring constantly and cook gently until it thickens, and reaches a smooth, creamy texture
Take out the Golden Galushka from the oven and serve 3-4 dumplings/person with the custard poured over it. Sift some confectioners sugar over if you want.
