Mini Apple Crumbles (for 4 small soufflé tins)
Ingredients – Filling:
3 medium green Golden Delicious apples
1 tbsp sugar (white or brown)
1/2 tsp cinnamon
1 tsp lemon juice
1 tsp flour or cornstarch (to absorb juices)
Pinch of cardamon
Ingredients – Crumble Topping:
50g cold butter,
3/4 cup flour
2 tbsp rolled oats (optional, for texture)
2 tbsp sugar
Pinch of salt
Instructions:
Preheat oven to 180°C (350°F).
Prepare the apples: Peel, core, and dice the apples into small chunks. Toss them with sugar, cinnamon, cardamon, lemon juice, and a bit of flour or cornstarch. Divide evenly among the 4 soufflé tins.
Make the crumble topping: In a bowl, mix the flour, oats (if using), sugar, salt, and cinnamon. Add the cold butter and rub it in with your fingertips until it resembles coarse crumbs.
Top the apples with the crumble mixture.
Bake for about 25–30 minutes or until the tops are golden brown and the filling is bubbling.
Let cool slightly before serving.
Sweet Coconut Sauce
Ingredients:
200ml (about 3/4 cup + 2 tbsp) full-fat coconut milk (shake the can well)
2 tbsp sugar (adjust to taste)
1 tsp cornstarch (for light thickening)
Pinch of salt
Instructions:
In a small saucepan, whisk the coconut milk, sugar, cornstarch, and salt until smooth.
Cook over medium heat, stirring constantly, until it thickens slightly and lightly coats a spoon – about 3–5 minutes. Don't let it boil hard; gentle simmering is fine.
Add vanilla if using, stir, and remove from heat.
