中式薄罉是一種地道的廣東食品,可以做甜也可以做鹹,是七八十年代常見於茶樓中的點心,但現在的茶樓已不見它的蹤影,正在漸漸失傳。香脆軟熟的口感,香口的花生芝麻,是甜薄罉的特色,也是童年時舌尖上的回憶。這道適合男女老少的懷舊甜品,現在一起試試做吧!
Chinese pancake is a traditional local food in south China. It can be sweet or salty which usually sold in Dim Sum restaurants in 80s. However, they are decreasingly being passed down to younger generations, it is hard to find them now. The Chinese Sweet Pancake has crispy and tenderly chewy texture, and nutty flavor. They are the traditional dessert, which popular for women, children, and elderly. Let's try it together now!

🍽份量: 3件

🧂材料:

餅皮:
糯米粉 60克
麵粉 50克
糖 20克
雞蛋 2隻
水 180毫升
油 2茶匙
餡料:
花生 65克
芝麻 30克
椰絲 30克
砂糖 40克

👨🏼‍🍳做法:

1) 把花生用中小火炒香,待涼後把它去衣,再用棒壓碎
2) 把芝麻用中小火炒香,再把椰絲用小火炒至微黃。
3) 將已炒香的花生、芝麻和椰絲加入砂糖,把餡料拌勻後備用。
4) 將糯米粉和麵粉糖過篩,再加入糖、雞蛋和水,然後拌勻至沒有粉粒。
5) 把油加入麵糊中,然後拌勻。
6) 把小許油加入平低鑊中,倒入一湯勺麵糊,然後鋪平,用中小火煎至兩面金黃色即可。
7) 將薄餅皮輕輕地放在砧板上,把適量餡料均勻地鋪在餅皮上,然後把它卷成條狀,把它切成數件上碟,完成。

🍽Quantity: 3 pieces

🧂Ingredients:

Pancake Skin:
60g Glutinous Rice Flour
50g Plain Flour
20g Castor Sugar
2 Eggs
180ml Water
2 tsp. Oil
Filling:
65g Peanuts
30g Sesame Seeds
30g Coconut Shavings
40g Castor Sugar

👨🏼‍🍳Step:

1) Parch the peanuts with medium-to-low heat until it turns golden brown, then undress the peel after cool down, and then crush it with stick.
2) Parch the sesame seeds with medium-to-low heat, then parch the coconut shavings with low heat until it turns slightly golden brown.
3) Add the castor sugar into the parched peanuts, sesame seeds and shredded coconut, then mix the fillings properly.
4) Sift the glutinous rice flour and plain flour, then add sugar, eggs, and water into the flour, and then stir and mix it until there are no powder particles.
5) Pour the oil to the batter and mix it properly.
6) Add a little amount of oil in a pan, then then spread a spoon of batter on the pan and flatten it, pan-fry it with medium-to-low heat until it turn golden brown on both sides.
7) Place the pancake on the cutting board gently, spread some filling evenly on the pancake, then roll it into strips, and cut it into several pieces.
