The Best Custard Pie

This custard pie is hard to beat - delicious, relatively light and very easy to make. As a matter of fact, it's almost impossible to mess up.

Ingredients

1 package of phyllo dough (15-18 sheets)
1 1/4 cups granulated sugar
4 eggs and 2 egg yolks
1 3/4 cups milk
1 3/4 cups heavy cream
1 tsp vanilla extract
1 tsp baking powder
1/2 cup melted unsalted butter
2 Tbsp brown sugar
Powdered sugar for sprinkling on top
Ground cinnamon for sprinkling on top

Instructions

Preheat oven to 400F convection.
Line a 9x13 inch cake pan with a pice of parchment paper. Spread a sheet of phyllo dough inside the pan and drizzle lightly with some butter using a pastry brush. Repeat with another two sheets, placing them on top each other.

Drizzle some butter on the remaining phyllo dough sheets, one at a time. Fold each sheet like an accordion and carefully transfer to the pan. Do not flatten them.
Be careful not to press down on them so they don’t flatten. Tuck any pieces that are sticking out in, and drizzle the remainign butter on top.

Place the baking pan in the oven on the top rack and bake for 20 minutes or until the phyllo turns golden brown and crunchy.

Meanwhile, prepare the custard. Beat the 4 eggs and the 2 egg yolks and sugar in a bowl, using a whisk, until the sugar has completely dissolved. Add the vanilla, baking powder, milk and heavy cream and contonue beating until all ingredients are combined well. Set aside.

Remove the pan with the phyllo sheets from the oven and turn the heat down to 350F convection. Pour the custard mixture evenly over the phyllo sheets, let sit for 2-3 minutes then sprinkle the brown sugar all over the top. Return the pan to the oven and bake for 20-25 minutes more.
Remove the pie from oven and let cool slightly. Remove from the pan holding parchment paper on both sides. Sprinkle with powdered sugar and cinnamon. Slice and serve.
