Recipe Book Vol 3 Chicken Recipes Pt 2

*** Green Chili Chicken ***
4 - 5 C Shredded Chicken Thighs
1/2 Medium Onion - diced
1 Tbsp Oil
1 Jalapeno - diced
1 Tbsp Butter
1/2 C Milk
11/2 C Heavy Cream
2 oz Cream Cheese
4 oz Can Green Chilies
2 tsp Chili Powder
1 tsp Cumin
1 tsp Garlic Powder
1/2 tsp Onion Powder
1/2 tsp Smoked Paprika
1/2 tsp Salt
1/4 tsp prepper
1 C Cheddar Cheese - shredded

Scallions for garnish

Heat oil & butter in a skillet, add onions & jalapenos, sauté for 4 - 5 minutes
or until onions are translucent.

Add milk & heavy cream, stir until combined. Add cream cheese & spices.

Add chicken & cheese. Stir until combined

Serve over rice or you can make enchiladas or tacos from the mixture, Also would make a
delicious dip.
*** Keto Chicken & Bacon Casserole ***
350°
1 Tbsp Avocado or Olive Oil
1 Small Onion - diced
3 - 4 Cloves Garlic - minced
1 1/2 lbs Ground Chicken
1 tsp Salt
1/2 tsp Black Pepper
1/2 lb Bacon - cooked & rough chopped
1 Tbsp Oregano
2 C Cheddar Cheese - shredded
2 Eggs
1/4 C Heavy Cream
1/2 C Sour Cream
In large pan add olive oil and onion cook 2 - 3 minutes, add garlic and cook until soft. Add ground
chicken to pan and cook through. Remove from heat & stir in bacon and oregano.

Spray 13 x 9 casserole dish with cooking spray. Pour meat mixture casserole dish and
stir in the cheddar cheese.

In small bowl add eggs, heavy cream & sour cream, whisk until well blended.

Pour over meat mixture.

Bake @ 350° for 20 - 30 minutes.
*** Chicken Cacciatore ***
1/3 C Olive Oil
1 Whole Chicken - cut up
2 Onions - Sliced
4 Cloves Garlic - Quartered
1 Bell Pepper - chopped
1/2 C Basil if fresh/ 1 1/2 tsp if dried
2 tsp Oregano
1/2 C Parsley
Salt & Pepper
2 Qts Whole Peeled Tomatoes
1 lb Pasta
Grated Parmesan
I always use 2 chickens so I have leftovers. I take the chicken and remove some of the skin, season
both sides with salt & pepper.

In a large dutch oven or 14" skillet add olive oil & onions, add garlic & bell pepper. Cook until
the vegetables start to soften. Add chicken and stir well, add oregano & basil. Continue to stir add parsley. Cook
until the chicken just starts to brown. Add tomatoes, stirring and breaking them up. Cover and simmer
45 minutes to an hour stirring occasionally. Dish is done when the meat starts to pull away from the bones.

Serve over pasta, top with grated parmesan.
*** Ground Chicken Meatloaf ***
2 lbs Ground Chicken
1 C Seasoned Breadcrumbs
2 Eggs
1 Medium Carrot - grated
1 Medium Onion - Chopped
4 - 5 Cloves Garlic - minced
1/2 C Ketchup
1 Tbsp Worcestershire Sauce
1 tsp Celery Salt
1/2 tsp Salt
1/2 tsp Pepper
1/4 C Fresh Parsley - chopped
Mix the chicken & breadcrumbs in a medium sized bowl while you prepare the remaining ingredients.

Add in carrots, onions, garlic, eggs, worcestershire sauce, celery salt, salt, pepper & parsley. Mix
well.

Place on a baking sheet lined with parchment paper. Shape onto pan.

Cover and bake @ 350 F for 1 hour. Uncover and cook for an additional 15 - 30 minutes or until internal
temperature reaches 160.
