Henry, the Final Boss of the Spicy Pork Loin Roast

This started off as a song with a recipe for Spicy Pork Loin Roast, but Henry (our cat) started bothering me. So, now its a song about Spicy Pork Loin Roast and Henry. Here is the actual recipe.

Spicy Dutch Oven Pork Loin Roast
Ingredients
1 pork loin roast, about 2 pounds
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
use less for moderate heat, more for extra spicy
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon crushed red pepper flakes
1 tablespoon brown sugar
1 tablespoon Dijon mustard
2 cloves garlic, minced
1/2 cup chicken broth
1 tablespoon Worcestershire sauce
Optional vegetables
3 to 4 carrots, cut into chunks
1 onion, cut into wedges
3 to 4 small potatoes, halved
Instructions
1. Preheat oven

Preheat your oven to 350°F.

2. Make the spice rub. In a small bowl, mix:
salt
black pepper
smoked paprika
chili powder
cayenne
garlic powder
onion powder
red pepper flakes
brown sugar

Rub the pork loin with:
olive oil
Dijon mustard
minced garlic

Then coat it well with the spice mixture.

3. Sear the pork
Heat your Dutch oven on the stovetop over medium-high heat.
Add a little oil if needed.

Sear the pork loin for about 2 to 3 minutes per side until nicely browned.

4. Add liquid
Pour in: chicken broth & Worcestershire sauce
If using vegetables, place them around the roast now.

5. Bake
Cover the Dutch oven with the lid and bake for about 45 to 60 minutes, or until the internal temperature reaches: 145°F for sliced pork loin
Check around the 45-minute mark since pork loin can dry out if overcooked.

6. Rest
Remove the roast from the Dutch oven and let it rest for 10 minutes before slicing.

Serving idea
Spoon some of the Dutch oven juices over the slices. It goes really well with mashed potatoes, roasted vegetables, or rice.

Tip:
If you want it a little spicier and stickier, brush the roast during the last 10 minutes with this mix:
1 tablespoon hot sauce
1 tablespoon honey
That gives it a nice glazed finish.
