No-baked cheesecake 🍰

Ingredients:
• 400g digestive biscuits
• 200g butter
• 1 tbsp vanilla extract
• 135g icing sugar
• 2 packs Klop-fix
• 400g Philadelphia cream cheese
• 500ml heavy cream (split into 2x 250ml: one for the batter and one for the topping)
• Blueberries
Instructions:
1. Crush the digestive biscuits using a blender or mortar and pestle in a large bowl.
2. Add the melted butter and mix thoroughly.
3. Transfer the mixture to a baking pan and press it down firmly using a glass or another object. Set aside.
4. In a separate bowl, mix the cream cheese, icing sugar, and vanilla extract. Set aside.
5. In another bowl, mix the heavy cream and Klop-Fix until stiff peaks form.
6. Combine the cream cheese mixture with the whipped cream and mix well until smooth. Pour this mixture on top of the biscuit base in the baking pan.
7. Refrigerate the cheesecake overnight or for at least 6 hours to set.
8. Whip the remaining heavy cream to make the topping.
9. Once the cheesecake has set, remove it from the tray and decorate with whipped cream and blueberries. It’s ready to serve and enjoy!

Super Quick & Easy Banana Rolls

Ingredients (for 6 pieces):
• 1 banana, cut into 6 pieces
• 6 croissant pastry sheets
• 1 egg yolk
• Chocolate sprinkles
• Sesame seeds

Instructions:
1. Preheat the oven according to the croissant pastry package instructions (mine was 200°C).
2. Place a piece of banana and some chocolate sprinkles on each pastry sheet, then roll it up. No need to worry about perfect folding—it will turn out fine!
3. Brush the rolls with egg yolk, sprinkle with sesame seeds and bake according to the croissant package instructions (I baked mine for 12 minutes).
4. Let them cool down, and they’re ready to enjoy!

Creamy Mushroom Tortelloni
(Serves 4)

Ingredients:
• 500g tortelloni
• 1 shallot (chopped)
• 4 garlic cloves (minced)
• Olive oil
• 250g mushrooms (cleaned and sliced)
• 70g tomato paste
• 125ml heavy cream
• Parmesan cheese
• 2 tsp sugar
• Salt and pepper (to taste)
• Fresh basil (for garnish)

Instructions:
1. Chop the shallot and mince the garlic, then set aside.
2. Clean the mushrooms and slice them as desired.
3. Heat olive oil in a pan over medium heat. Sauté the garlic and shallot until soft and fragrant, add the mushrooms and cook until tender.
4. Stir in the tomato paste and mix well. Pour in the heavy cream and stir until fully combined, season with salt, pepper, sugar, and some parmesan cheese.
5. In a separate pot, cook the tortelloni according to the package instructions (I only cooked mine for 3 minutes). Drain the pasta and discard the water.
6. Add the cooked tortelloni to the sauce and mix well.
7. Transfer the pasta to a plate or bowl. Sprinkle with parmesan cheese and fresh basil on top. Serve warm and enjoy!
