• 4 veal tournedos , about 75 g. each
• 1 Tbsp. / 14 g. cracked pepper corns , plus 1 Tbsp. WHOLE pink peppercorns
• 2 Tbsp. / 28 ml. olive oil
• 2 Tbsp. / 28 g unsalted butter
• 1 shallot, thinly sliced
• 3 oz. / 75 ml. white wine
• 1 cup / 225 ml. chicken stock or broth
• 4 oz. / 110 ml. heavy cream
