Bhatyara style white mutton biryani . Bakra Eid special recipe
Bhatyara style white mutton biryani ( recipe by Nazia Farhan )
Guys this turns out just lippp smacking
In a pressure cooker take 200 mL oil , 100 gm butter and fry 3 big sliced onions till golden and remove . Keep aside the onion and oil .
Grind together 1 tbsp saunf , 1 tbsp whole dhanya and 1 tbsp zeera to a rough powder , in the same jug , put over 2 tbsp garlic cloves , 2 inch Ginger , and 15-20 green chilli . Add little water and blend to paste . Keep aside .
Marinate 1-1.25 kg mutton / buff/ chicken with salt , 1 tsp whole black pepper , 2 badi elaichi, 4-5 green elaichi, 5-6 laung, 5-6 pc dalchini, 2 badiyan broken , 2-3 tej patta , 1 tsp Garam masala powder , 1 tsp red chilli flakes , the prepared green paste , 300 gm Dahi , 2 big sliced onions , 2 big chopped tomatoes and half cup of the oil in which we fried the onion in the start ( remaining half will be used on the rice )
Mix well and let marinate for 3-4 hours or preferably overnight in the fridge . Then pressure cook till done . If you wish you can add potatoes and cook till done after the meat is almost cooked.
Boil 750 gm washed and soaked basmati rice with 1 tsp whole black pepper , 2 tej patta and 4-5 pc dalchini and salt . Till 75% cooked and strain and keep aside .
Put your rice vessel on a tava and spread a thin layer of rice . Spread the mutton gravy , and sprinkle barista, and lots of chopped coriander and mint , 5-6 green chilli and few pcs of aloo bukhar ( optional ) . Put the remaining rice and drizzle the half of the barista oil we had left .
Cover and cook on high heat for 15 min . Low heat on dum for 30 min and switch off heat and let rest for 20-25 min .
Serve hot with Dahi kachumber
