In Telugu, Vankaya means Brinjal and Chikkudukaya means Flat or Broad Beans. A common dish made in Andhra, this is simple to make with very few ingredients.
I have added onions in this, you can totally skip it. This does not require tomatoes. The spice and flavour comes with only green chillies, ginger and coriander, which you can alter according to your taste.
This goes well with Rice or with rotis.
