Duchess Potatoes Three Ways - A Make-Ahead Mashed Potato Recipe

These buttery Parmesan-Herb Duchess Potatoes are a French twist on traditional mashed potatoes that are perfect with any meal! In this video, I show you three ways to make Duchess potatoes and give tips on how to make them ahead of time!

INGREDIENTS:
2 ½ pounds Yukon Gold potatoes, peeled and cut in half (or similarly-sized pieces if some potatoes are smaller)
¼ cup heavy cream
3 tablespoons unsalted butter
1 teaspoon salt
¼ teaspoon pepper
1 sprig fresh rosemary
3-4 sprigs fresh thyme
3 large egg yolks, at room temperature and lightly beaten
Olive oil
3/4 cup freshly grated Parmesan cheese, divided
