At a young age, Bien Cuit owner Zachary Golper caught his first whiff of freshly baked sourdough bread, and ever since then, he’s been hooked. Here in Brooklyn, New York, he tackles smaller batch baking with long fermentation periods, which result in tangy-flavored breads and buttery almond croissants.
