● Brownie Batter

300g dark chocolate
180g butter
4 eggs (200g)
140g granulated sugar
50g pastry flour
5g baking powder

● Ganache

200g heavy cream
200g dark chocolate, partially melted

● Chocolate Mousse

100g milk
100g heavy cream
50g egg yolks
90g granulated sugar
2 ½ sheets of gelatin (5g)
250g milk chocolate
400g cold heavy cream

● Assembly

cocoa powder
melted chocolate
gold powder
