Marinara Sauce made with Fresh Tomatoes : Homemade : Fresh from the Garden
This delicious sauce is fresh and bright and straight from my garden! Just cook the base recipe and use it as is, or add extra herbs, spices and vegetables to suit the dish you want to make.
This recipe yielded 5 quarts of Sauce
-10 lbs of Fresh Tomatoes Quartered
-5-6 cloves of garlic
-5 Fresh Basil Leaves
-1 Medium Yellow Onion
-Olive Oil
-Salt
-Pepper
-Italian Seasoning
Tools Needed:
-Large pot
-Knife
-Immersion Blender
-Silicone Garlic Peeler
-Chop the Tomatoes into quarters
-Place them into a strainer and Salt as you go
-Let the tomatoes sit in the strainer for about 30 minutes to allow the excess water to sweat out of the tomatoes
-Once the tomatoes have sweat, dice your onion and garlic—keep them separate, they will cook at different times.
-heat olive oil and cook your chopped onions until they are almost translucent. Once they are almost translucent add your minced garlic, otherwise it may burn.
-After your onions and garlic have cooked, add your tomatoes and cook on high until they start to cook and liquify. Once your tomatoes start to boil add your basil leaves.
-Lower your heat to low and allow to simmer for about an hour stirring occasionally.
-After it has simmered, use the immersion blender to blend your tomatoes to a smooth consistency.
-At this point you can add salt, pepper, and Italian seasoning to taste.
*Some like to also add red pepper flakes, sugar, etc.
This sauce can be canned or put into a food saver bag and frozen
