Ingredients:
- 2 cups strawberries
- 2 tbsp chia seeds
- 2 tbsp water
- 1/4 cup honey
- 3 tbsp lemon juice

Method:
Add strawberries, chia seeds, water and lemon juice to a saucepan over medium heat.
As the strawberries begin to soften (about 5–7 minutes), mash them well using a fork or potato masher.
Let the mixture simmer for another 5–8 minutes until it thickens to a jam-like consistency. Stir occasionally to prevent sticking.
Turn off the heat and stir in the honey.
For a smoother texture, blend using an immersion blender or regular blender.
Let the jam cool completely — it will thicken further as it cools.
Transfer to a clean, airtight glass container and store in the refrigerator.
