How Tournant’s Chefs Mastered the Art of Open Fire Cooking — Smoke Point
Chefs Jaret Foster and Mona Johnson combine their love of seasonal ingredients, open fire cooking, and nature with their roving kitchen, Tournant. By creating the moveable kitchen—bringing with them a number of different grill beds, cast iron pans, and other apparatuses for open fire cooking—the duo prepares all of their catered feasts and events outside, over an open fire, anywhere in the Pacific Northwest. Here we see them create dishes like cedar roasted whole salmon, smoked pork, fire-roasted mussels, roasted lamb shoulder and vegetables in a giant cast iron dish, and more.
