THE RECIPE
Serves: 3
INGREDIENTS
3 sweet potatoes, scrubbed clean and dried
3 whole mackerel, gutted
2 tbsp oil
2 lemons, thickly sliced
2 limes, thickly sliced
salt

METHOD
Pierce the skin of the sweet potatoes and wrap in a double layer of foil.
Bury in the embers of a campfire or BBQ, turning once in their 45 minute cooking time.
Score the sides of each fish with a sharp knife, and stuff each belly cavity with a few slices of citrus.
Place in a wire BBQ basket, and lock shut.
When the embers are white, place the basket on the fire and let cook for 3 or 4 minutes before turning over and repeating on side two.
Lightly salt each side of the fish as it cooks.
Test the temperature by placing the tip of the Thermapen into the thickest part of the fish in a few different places. The temperature needs to read at least 60C or 140F, a little over is OK. The temperature reading will constantly change as the Thermapen responds to the minutest changes in the environment and within the meat.
Serve with the sweet potatoes and a green salad.
Squeeze over the juice from your lemons and limes and dig in!
