How to Make Peppermint Patties

Today I tried to imitate York Peppermint Patties...with green middles. The look wasn't perfect, but the taste was bangin'.

Helpful Tips:
*If the chocolate is too thick for your taste, you can thin it out by adding some shortening
*Transfer the patties directly to parchment paper to avoid the criss-crossed bottoms (but your chocolate will pool a little)
*Try taking the dry patties out of the freezer one at a time if they are warming up too quickly

WHAT YOU’LL NEED:
⬞One 14 oz can of sweetened condensed milk:
⬞2 T peppermint extract:
⬞1 T of corn syrup:
⬞1 tsp salt:
⬞Green food dye:
⬞6 cups sifted powdered sugar (plus some for sprinkling):
⬞Ghiardelli dark chocolate melting wafers:
⬞Rolling pin:
⬞Circle-shaped cutter:
⬞Parchment paper:
⬞Cooling rack:
STEPS:
1. In a bowl, combine your sweetened condensed milk, peppermint extract, corn syrup, salt, and food coloring.
2. Add in your 6 cups of powdered sugar, a little at a time, and beating in between until fully incorporated. The dough will be stiff.
3. Sprinkle a clean surface with powdered sugar, then roll out your dough to 1/2 inch thick.
4. Let dough sit out for about a minute, then use your rolling pin to gently roll over the top of the surface to create a rippled texture.
5. Use a circle cutter (roughly the same size as a York Peppermint Patty) to cut out as many patties as possible.
6. Transfer patties to a cookie sheet and freeze for 20 minutes.
7. Melt chocolate wafers by adding them to a deep bowl or cup, microwaving at 50% power for 30 seconds, followed by 15 second intervals, stirring in between, until it is fully melted.
8. Prepare the cooling rack by placing a sheet of parchment paper underneath.
9. Drop frozen patties into melted chocolate.
10. Use two forks to flip the patty over and coat all sides/edges, then transfer to the cooling rack. (Work quickly in the chocolate so that the patties do not melt)
11. Repeat for all patties, then freeze entire rack for another 20 minutes.
12. Gently press on the underside of the individual patties until they are loosed from the rack.
13. Transfer to a plate or platter.
