Red Zone Hot Chicken Sandwiches, Nashville Style!

Ingredients
- Hattie Z’s Nashville Hot Seasoning by the Spice Guy
- The Wing Man Buffalo Sauce by The Spice Guy
- 6 Chicken Thighs, (use chicken breasts cut into halves if you prefer white meat)
- 4 Cups Buttermilk
- 4 Cups Flour
- 6 Cups Frying Oil
- 1 Cup Pickles in Juice
Hot Chicken Glaze Ingredients
- 2 Tbsp The Wing Man Buffalo Sauce by The Spice Guy
- 1 tsp Hattie Z’s Nashville Hot Seasoning by the Spice Guy
- 2 Tbsp Fry Oil
- 1 Tbsp Honey
- 3 Tbsp Butter
Special Sauce Ingredients
- 2 Tbsp The Wing Man Buffalo Sauce by The Spice Guy
- 1 Cup Mayo
- 2 Tbsp Pickle Juice
- 3 Tbsp Ketchup
Instructions
1. Marinate the chicken: Combine 4 Cups buttermilk, and 3/4 Cup of pickle juice with 1 tsp Hattie Z’s Nashville Hot Seasoning by the Spice Guy and add to a food safe container with the chicken, marinate for at least 2 hours, not exceeding 12.
2. Preheat your smoker or grill to 220 °F.
3. Remove chicken from the brine, season with 1 tsp Hattie Z’s Nashville Hot Seasoning by the Spice Guy, and smoke for 45 minutes.
4. Prepare for frying: Heat 6 cups of frying oil. We prefer peanut, avocado, or vegetable oil to 350 °F.
5. Preparing the chicken: In a prep container add 4 Cups of flour and 2 Tbsp Hattie Z’s Nashville Hot Seasoning by the Spice Guy. In another prep container, thoroughly combine 1/2 cup buttermilk with 6 eggs. Remove the chicken from your grill or smoker and add back to the buttermilk brine. Then, fully coat all sides with the flour and Hattie Z’s Nashville Hot Seasoning by the Spice Guy mixture. Repeat the process one time to insure a fully coated piece of chicken.
6. Fry the chicken tenders until golden brown. Then, place back on the smoker to dry.
7. Making the hot chicken glaze: Combine 2 Tbsp The Wing Man Buffalo Sauce by The Spice Guy, 1 tsp Hattie Z’s Nashville Hot Seasoning by the Spice Guy, 2 Tbsp fry oil, 1 Tbsp honey and 3 Tbsp butter.
8. Paint or mop the glaze onto the chicken.
9. Toast brioche buns on the smoker, then assemble sandwiches with the special sauce, fried chicken, and pickles.
Pro Tips: We tested this recipe with gluten free all purpose flour as well, and it works great! You can also turn this into a batch of sliders by cutting chicken breasts or thighs into quarters before cooking.
