Basic Fat Head Dough
Hey Everyone,
This is my version of basic fat head dough but you will find several on the web. It is so versatile.
6-8 ounces shredded mozzarella
4 ounces cream cheese (1/2 a brick)
1 raw beaten egg
2 cups almond flour
(keep extra almond flour near by in case your dough is too wet or sticky)
Microwave the 2 cheeses for a minute to minute and 30 secs.
Stir
Microwave again for a minute
Stir
Add 1 cup almond flour
Add egg
Stir
Add more almond flour slowly as needed to stir into a ball.
Keep kneading until you get a bread dough consistency.
You don't want it too wet or too sticky.
Now depending on what you are going to do with your dough you have options at this point.
If you want to make a variety of things then you will have to add those specific ingredients into your dough.
If you add Italian Seasoning into it, makes a great pizza crust
If you add some Swerve or keto safe sweetener then you can roll it out into a pie crust.
If you make dough balls out of it, it can go straight into a waffle iron
You can roll it really thin between sheets of wax paper to get it thin for crackers or even a faux pasta. ( I didn't do the pasta this time)
I have gone as far as putting it through the pasta attachment on my mixer before too.
When I do the crackers. I roll it thin onto my cookie sheets and then paint with softened butter and sprinkle with salt and parmesan for a savory or for a sweet one I paint with butter and sprinkle with swerve and cinnamon. I also use a wheel like a pizza cutter to score them into cracker size pieces.
I always bake my dough at 350 and rotate it every 7 min on the oven shelves so it doesn't burn. Each batch takes between 15-20 mins for me. It may vary for you. Watch for a golden brown color.

and it is optional. After I bake the crackers to a golden brown, I layer them into the dehydrator and leave them going for at least 4 hours. Sounds like a long time but I just leave them going and move on to other tasks.
